Ingredients
- 2 tsp. Salt
- 1/2 tsp. Pepper
- 1 Tbsp. Paprika
- 1 tsp. Cumin
- 1 tsp. Cayenne
- 2 tsp. Thyme
- 1 Tbsp. Garlic Powder
- 1 tsp. Onion Powder
- 1/2 Cup Barbecue Sauce
Direction
- Preheat your fire or grill to medium-high heat. Add a grill plate if you are using an open fire.
- Combine salt, pepper, cumin, paprika, cayenne, thyme garlic powder, and onion powder in a bowl.
- Remove the thigh bone from each duck leg by pulling it apart at the join then cutting the bone off with a sharp knife.
- Cut a circle around the edge of each duck leg bone making sure to cut through the cartilage and tendons. Pull back the skin so the tip of the leg bone is completely exposed.
- Push meat down to form a ball and trim sides.
- Coat each duck leg lollipop in the spice mix.
- Place the duck leg lollipops directly on the grill. Grill for 20 minutes turning every few minutes to evenly brown each side.
- Brush legs with barbecue sauce and grill for 5 more minutes or until duck reaches 165 degrees.
- Let rest for 5 minutes and serve with extra barbecue sauce.
