Ingredients
- 1 Roast Half Duck or All Natural Pulled Duck , Defrosted
- 4 cups Rice (day-old preferred)
- 1 White Onion
- 2 Carrots
- 1 Bunch of Chives or Green Onions
- 2 tbsp. Butter
- 1 tsp. Salt
- Peanut Oil
- 3 Eggs
- Soy Sauce to Taste
- 1 tsp. Five-Spice
Direction
- Prepare rice or use leftover rice.
- Chop onion, carrots, and chives.
- Melt butter in large frying pan on medium heat — coat bottom.
- Add onions, carrots, and salt to pan and cook until onions and carrots are soft.
- Add Pulled Duck Leg Meat or Roast Half Duck to pan. Sear until crispy.
- Remove duck and vegetables from pan. Set aside for later.
- Coat pan with peanut oil.
- Crack eggs into pan and scramble.
- Add rice to pan and douse with soy sauce to taste. Fry to preferred crispness.
- Turn off heat. Add duck and vegetable mixture to pan. Mix in five spice.
- Add chives to pan and let rest for 5 minutes.
- Serve in bowls and enjoy!
