Ingredients
- 12 oz.Ground Duck,Defrosted
- 8 cups of Crusty Bread,Cubed
- 1/2 tsp. Sage,Ground
- 1 tsp. Salt
- 1/2 tsp. Black Pepper
- 1/2 tsp. Dried Thyme
- 3 tbsp. Butter
- 1 Large Onion,Diced
- 2 Stalks Celery,Thinly Sliced
- 4 Cloves of Garlic,Minced
- 1 Small Bunch Fresh Sage,Finely Chopped
- 1 Small Bunch of Fresh Thyme,Chopped
- 2¼ cups Stock
- 2 Eggs,Whisked
Direction
- Preheat oven to 350°F. Bake bread cubes in oven for 15 minutes.
- Mix ground duck with sage, salt, pepper, and dried thyme to create duck sausage.
- Cook duck sausage on medium heat in large saucepan. Remove and set aside.
- Melt butter in pan. Add onion and celery and cook for 5 minutes.
- Add garlic, fresh sage, and fresh thyme. Cook for 1 minute.
- In large mixing bowl, combine toasted bread cubes, duck sausage, vegetables, stock, and eggs.
- Transfer mixture to a greased baking sheet. Cover with foil and bake for 20 minutes.
- Remove foil and bake an additional 20 minutes. Let cool for 5 minutes and serve.
