Duck Sliders with Caramelized Apples

Ingredients

  • 1/2 tsp. Five Spice Powder
  • 1-1/2 tsp. Minced Shallot
  • 3 tsp. Minced Ginger
  • 1/2 tsp. Minced Garlic
  • Ground Pepper, to taste
  • 1 Tbsp. Butter
  • 1 Granny Smith or Fuji Apple, thinly sliced
  • 1/4 Chopped Dried Cherries
  • Juice and Zest of Half an Orange
  • 1/4 tsp. Cinnamon
  • 1/4 tsp. Coriander
  • 1/4 tsp. Clove
  • 1 tsp. Brown Sugar
  • Pinch of Salt
  • 4 Brioche Buns
  • Wasabi Mayonnaise

Direction

Burger:

  • Mix the ground duck and the five spice powder, salt and pepper, shallot, ginger, and garlic.
  • Make approximately 4 sliders about 2 ounces each and form into patties.
  • Cook the burgers on a grill until medium well or 150 degrees F. Set aside to rest while you make the caramelized apples.

Apples:

  • Take the thinly sliced apples and put in a hot pan with some melted butter and oil.
  • Add the chopped cherries, juice and zest of half an orange. Add the cinnamon, coriander, cloves and brown sugar.
  • Cook until the apples are soft and starting to caramelize, about 15 to 20 minutes in a covered pan on medium low heat.

Plating:

  • To serve, put the burger on a toasted brioche bun with wasabi mayo and the caramelized apples on top.
