Ingredients
- 24 oz. Ground Duck
- ½ Cup Panko
- 6 Cloves Garlic, Minced
- 8 Slices American Cheese
- 4 Brioche Buns
- Kosher Salt
- Fresh Ground Pepper
- 2 Tbsp. Mayonnaise
- 1 Tbsp. White Vinegar
- ½ tsp Thyme
- Equipment: Parchment Paper and a weight
Direction
- Preheat your griddle to medium high heat.
- Combine Ground Duck, panko, and 4 cloves of minced garlic. Season with salt and pepper.
- Divide into 8 even round balls.
- Place a few balls on the griddle at a time. Cover with parchment paper and smash with a weight.
- Let cook for 1-2 minutes then flip. Season again with salt and pepper then top with a slice of cheese and cook for 1 more minute. Repeat for each burger.
- While burgers rest, toast buns in the duck burger fat for 1 minute per side.
- Mix the remaining garlic, mayo, vinegar, and thyme to make garlic aioli.
- Assemble burgers with 2 smash patties per burger with garlic aioli on top nestled between the buns.
