Duck Smash Burgers

Ingredients

  • ½ Cup Panko
  • 6 Cloves Garlic, Minced
  • 8 Slices American Cheese
  • 4 Brioche Buns
  • Kosher Salt
  • Fresh Ground Pepper
  • 2 Tbsp. Mayonnaise
  • 1 Tbsp. White Vinegar
  • ½ tsp Thyme
  • Equipment: Parchment Paper and a weight

Direction

  • Preheat your griddle to medium high heat.
  • Combine Ground Duck, panko, and 4 cloves of minced garlic. Season with salt and pepper.
  • Divide into 8 even round balls.
  • Place a few balls on the griddle at a time. Cover with parchment paper and smash with a weight.
  • Let cook for 1-2 minutes then flip. Season again with salt and pepper then top with a slice of cheese and cook for 1 more minute. Repeat for each burger.
  • While burgers rest, toast buns in the duck burger fat for 1 minute per side.
  • Mix the remaining garlic, mayo, vinegar, and thyme to make garlic aioli.
  • Assemble burgers with 2 smash patties per burger with garlic aioli on top nestled between the buns.
