  • 2 avocados
  • 2 tsp salt
  • 2 lime
  • 4 cloves garlic minced
  • 2 bunch cilantro, finely chopped
  • 1 can diced tomatoes with green chiles
  • ½ red onion, diced
  • 1 tbsp. apple cider vinegar
  • pinch of sugar
  • 16 oz. refried beans
  • 2 cups shredded cheddar cheese
  • ½ cup of sour cream or crema

Direction

  • In a pan on medium high heat, brown ground duck for 7-10 minutes. Mix in chili powder and cumin. Salt to taste.
  • In a mixing bowl, smash the avocados. Add half of the minced garlic a half cup of cilantro, 1 tsp salt, and the juice of one lime. Mix together to make guacamole.
  • In another mixing bowl, add diced tomatoes with chiles, diced red onion, ½ cup cilantro, the remaining garlic, the remaining slat, apple cider vinegar, and a pinch of sugar. Mix together to make salsa.
  • In a large clear glass serving bowl, start the layer dip with the refried beans at the base.
  • Top the refried beans with the shredded cheddar cheese.
  • Top the cheese with a salsa layer. Reserve a half a cup of salsa for garnish.
  • Top the salsa with the ground duck layer.
  • Top the ground duck with the guacamole.
  • Top the guacamole with sour cream. In the outer edges of the bowl, add the remaining cilantro and salsa for garnish.
  • Optional: make a Halloween design by using a zip bag to pipe the sour cream out into a spiral pattern. Run a toothpick through to form a spiderweb pattern.
