Ingredients
- 4 tbsp. Duck Fat , Melted
- 1.5 lbs. Baby Potatoes,Quartered
- 1-2 Shallots,Thinly Sliced
- 4 Garlic Cloves,Minced
- 1 tsp Fresh Rosemary,Chopped
- Salt & Pepper to Taste
- Heavy Duty Foil Sheets
Direction
- Preheat grill to medium high heat.
- In a large bowl toss Duck Fat, potatoes, shallot, garlic, and rosemary. Add salt and pepper to taste.
- Divide mixture between 4 large sheets of foil. Fold and seal all sides in to form a foil packet.
- Place Duck Fat potato pockets on the grill and cook for 25 minutes or until tender.
- Carefully open packets and serve.
