Grilled Duck Fat Potato Packets

Golden potatoes roasted in rich Duck Fat, wrapped in foil and grilled until perfectly crispy on the outside and tender on the inside. This recipe is ready in just about 30 minutes!

Ingredients

  • 1.5 lbs. Baby Potatoes,Quartered
  • 1-2 Shallots,Thinly Sliced
  • 4 Garlic Cloves,Minced
  • 1 tsp Fresh Rosemary,Chopped
  • Salt & Pepper to Taste
  • Heavy Duty Foil Sheets

Direction

  • Preheat grill to medium high heat.
  • In a large bowl toss Duck Fat, potatoes, shallot, garlic, and rosemary. Add salt and pepper to taste.
  • Divide mixture between 4 large sheets of foil. Fold and seal all sides in to form a foil packet.
  • Place Duck Fat potato pockets on the grill and cook for 25 minutes or until tender.
  • Carefully open packets and serve.
