Pulled Duck and White Bean Salad

Tender pulled duck meat and a dressing flavored with sherry wine vinegar makes this recipe perfect for entertaining.

Ingredients

Dressing:

  • 3 Tbsp Sherry Wine Vinegar
  • 1/3 cup Olive Oil
  • 12 cups Spring Lettuce Mix
  • Vinegar & Oil Dressing
  • Salt & Pepper, to taste

Salad:

  • 38 oz Canned White Cannellini Beans, drained and rinsed
  • 3/4 cup Green Olives, chopped
  • 1 Red Pepper, roasted, peeled, seeded, and diced
  • 1 Cucumber, peeled, seeded, and diced
  • 1/2 cup Red Onion. diced
  • 14 oz can Diced Tomatoes, drained
  • 1/2 cup Fresh Parsley, chopped

Dressing:

  • Whisk together oil and vinegar dressing.

Salad:

  • Add all ingredients except duck in a large mixing bowl. Add oil and vinegar dressing.
  • Toss gently and season with salt and pepper.

Plating:

  • Place 2 cups of dressed spring lettuce on a plate. Top with 1-1/2 cups white bean salad. Top with duck. Sprinkle with Parmesan cheese.
