Ingredients
Dressing:
- 3 Tbsp Sherry Wine Vinegar
- 1/3 cup Olive Oil
- 12 cups Spring Lettuce Mix
- Vinegar & Oil Dressing
- Salt & Pepper, to taste
Salad:
- 38 oz Canned White Cannellini Beans, drained and rinsed
- 3/4 cup Green Olives, chopped
- 1 Red Pepper, roasted, peeled, seeded, and diced
- 1 Cucumber, peeled, seeded, and diced
- 1/2 cup Red Onion. diced
- 14 oz can Diced Tomatoes, drained
- 1/2 cup Fresh Parsley, chopped
Duck:

Dressing:
- Whisk together oil and vinegar dressing.
Salad:
- Add all ingredients except duck in a large mixing bowl. Add oil and vinegar dressing.
- Toss gently and season with salt and pepper.
Plating:
- Place 2 cups of dressed spring lettuce on a plate. Top with 1-1/2 cups white bean salad. Top with duck. Sprinkle with Parmesan cheese.
