Ingredients
- 8 oz. Duck Bacon
- 6 eggs
- 1 tbsp. skim milk
- 1/2 tsp. salt
- ½ tsp. pepper
- 1 Cup spinach
- 6 English Muffins
- 6 thin slices cheddar cheese
Direction
- Preheat oven to 325 degrees f. Whisk eggs together with milk, salts and pepper. Pour into a 9 by 13 in greased pan. Mix in spinach and bake for 15 minutes.
- Heat skillet over medium-high heat. Place a single layer of duck bacon in skillet. Cook 2-4 minutes per side. Remove bacon and let cool on paper towel.
- Cut eggs into 6 squares. Cut each duck bacon slice into thirds.
- On the bottom half of the English muffin, stack 4 pieces of duck bacon, cheddar cheese, then egg square. Top with top half of English muffin.
- Heat and serve immediately, or save in the freezer for meal prep.
