Ingredients
- 4 Tbsp. Duck Fat, cold
- 4 Tbsp. Chilled Butter, Cubed
- 2 Cups All Purpose Flower
- 1 tsp. salt
- 6 tbsp. Ice Water
Direction
- In a large bowl or mixer, whisk together flour and salt.
- Add chilled duck fat and butter into flour mixture and work it in until it turns into course crumbs.
- Add in 1 tbsp. of chilled water at a time, gently mixing until it holds together.
- Wrap in plastic wrap and chill for 1 hour.
- Divide the dough in half. On a lightly floured surface, roll out each disc to fit your pie pan. Work quickly to keep the dough cold. Transfer to the pan and trim any overhang.
- Use duck fat pie crust in a pie recipe or in a prebaked crust. For a pre-baked crust: Prick the bottom with a fork, line with parchment, and fill with pie weights. Bake at 375°F for 15-20 minutes.
- Apple Pie Option: Liv recommends making an apple pie with 6 cups sliced and peeled granny smith apples, ¾ cup sugar, 2 tbsp. flour, ¼ tsp. salt, and 1 tsp. cinnamon. Mix ingredients then place onto duck fat unbaked duck fat pie crust. Bake at 400 for 45 minutes.
