Ingredients
- 1 cup Brown Sugar
- 1/2 cup Pure Maple Syrup
- 4 slices Maple Leaf Farms Duck Bacon
- 2 Eggs, beaten
- 1/2 tsp Maple Extract
- 2-1/4 cups Flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 tsp Kosher Salt
- 3/4 cup Toasted Pecans, chopped
Direction
- Preheat oven to 350°F. Lightly spray a 9” x 13” baking pan with nonstick spray.
- Combine duck fat, brown sugar and maple syrup in a large saucepan. Place over medium heat and cook, stirring frequently, until duck fat has melted and brown sugar has dissolved, 2 or 3 minutes. Set aside to cool for at least 15 minutes.
- While the duck fat-sugar mixture cools, cook the duck bacon in a sauté pan until crisp and golden. Drain well on paper towels, then coarsely chop.
- Add beaten eggs and maple extract to the cooled duck fat-sugar mixture, stirring until well combined.
- Stir in the flour, baking powder, baking soda and salt, then fold in chopped duck bacon and pecans.
- Pour batter into the prepared pan, and bake in the preheated oven until golden brown and set in the center, 25-30 minutes.
- Cool completely in the pan before slicing into bars.
