Smashed Potatoes with Duck Bacon and Bleu Cheese

Add duck fat, duck bacon and cheese to individually smashed small potatoes for a tasty appetizer or treat.

Ingredients

  • 1.5 lbs Small Red Potatoes, rinsed
  • Salt & Pepper, to taste

Topping:

  • 1/2 cup Crumbled Bleu Cheese
  • 1-2 Scallions, thinly sliced

Direction

  • Heat oven to 450 degrees F.
  • Bring large pot of water to boil and add potatoes. Boil until potatoes are tender, about 15 minutes. Drain potatoes.
  • While potatoes are boiling, cook the duck bacon in a medium-high heated skillet, 4 minutes per side. Remove bacon to drain, then dice. Reserve duck fat from bacon.
  • Coat baking sheet with reserved duck fat, and then place potatoes on baking sheet. Smash the potatoes with the bottom of a glass.
  • Brush potatoes with more duck fat. Season the potatoes with salt and pepper to taste.
  • Roast potatoes in oven until skin is golden brown (about 15 minutes).
  • Remove from oven; top with bleu cheese, duck bacon, and scallions.
