Ingredients
- 1.5 lbs Small Red Potatoes, rinsed
- Salt & Pepper, to taste
Topping:
- 4 strips Duck Bacon , cooked and diced, reserving the fat
- 1/2 cup Crumbled Bleu Cheese
- 1-2 Scallions, thinly sliced
Direction
- Heat oven to 450 degrees F.
- Bring large pot of water to boil and add potatoes. Boil until potatoes are tender, about 15 minutes. Drain potatoes.
- While potatoes are boiling, cook the duck bacon in a medium-high heated skillet, 4 minutes per side. Remove bacon to drain, then dice. Reserve duck fat from bacon.
- Coat baking sheet with reserved duck fat, and then place potatoes on baking sheet. Smash the potatoes with the bottom of a glass.
- Brush potatoes with more duck fat. Season the potatoes with salt and pepper to taste.
- Roast potatoes in oven until skin is golden brown (about 15 minutes).
- Remove from oven; top with bleu cheese, duck bacon, and scallions.
