Ingredients
- 2 Tbsp Ancho Chili Powder
- 1 Tbsp Cumin
- 1 Tbsp Smoked Paprika
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1/2 tsp Thyme
- 1/2 tsp Oregano
- ¼ tsp Salt
- 1 can Tomatoes with Green Chilies
- 1/2 cup Heavy Cream
- 16 oz White Velveeta cut into large cubes
- 2 cups Gouda, shredded
- 1 cup Monterey Jack Cheese shredded
- 4 Cloves Garlic, minced
- ½ cup Fresh Cilantro
- Tortilla Chips
Direction
- Preheat smoker to 350 degrees F and add in wood chips/pellets.
- Mix together Ancho chili powder, cumin, paprika, garlic powder, onion powder, thyme, oregano & salt. Add in Ground Duck and mix well.
- Add all remaining ingredients (minus the cilantro) to a large cast iron pan or dutch oven. Place on smoker.
- After 15 minutes, stir together. Cook for 30 more minutes stirring occasionally. Top with cilantro in the last few minutes. Serve with tortilla chips.
