Ingredients
- 12 oz.Ground Duck
- 1/2 tsp Sage,Ground
- 1/2 tsp Basil
- 1/2 tsp Chili Powder
- 1 tsp Thyme
- 1/4 tsp Cayenne Pepper
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 3 New York Style Bagels
- 3 Eggs
- 3 Slices of Cheddar Cheese
- 2 Shallots,Thinly Sliced
- 2 tbsp. Butter
- 2 tbsp Whipped Cream Cheese
Direction
- Combine ground duck with sage, basil, chili powder, thyme, cayenne, salt, and pepper to create duck sausage.
- Separate mixture into 3 balls and form patties.
- In a sauté pan on medium heat, fry duck sausage for 3-5 minutes per side or until they reach 165°F internal temperature. Add cheese on top of each patty with 2 minutes left of cooking.
- Remove duck from pan and add half the butter. Sauté shallots for 5 minutes. Remove and set aside.
- Split the bagels and toast in the toaster.
- Add remaining butter to pan and fry eggs to desired doneness.
- Assemble breakfast bagels in the following order: bottom bagel, duck sausage with cheese, shallot, egg, then top bagel smeared with whipped cream cheese. Serve immediately.
