Duck Fajitas

Fire up the griddle and create this delicious dish that is bursting with flavor! Using Duck Fat to add a perfect hint of umami taste to this powerhouse of a dish. You can make this dish in minutes for a quick meal or to feed a crowd at your next cookout.

Ingredients

  • 2 Duck Breast, defrosted
  • 2 tbsp. duck fat or oil
  • 1 Tbsp. Chili Powder
  • ½ Tbsp. Cumin
  • ½ tsp salt
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 large yellow onion
  • 4 tortillas
  • Cilantro for Garnish
  • Cotija Cheese for Garnish

Direction

  • Preheat griddle to medium heat.
  • Carefully remove skin from duck breast. Thinly slice duck breast into long strips.
  • In a bowl, mix duck breast strips with chili powder, cumin, and salt.
  • Thinly slice the onion and bell peppers.
  • Add 1 tbsp. of duck fat onto one half of the griddle. Add thinly sliced onion and bell peppers and cook for 5-7 minutes, stirring frequently.
  • Add remaining duck fat on the other side of the griddle and add seasoned duck breast strips. Cook for 5-7 minutes, stirring frequently.
  • Mix the duck and fajita veggies together and cook for 1-2 minutes.
  • Remove the fajita mixture into a bowl. Toast tortillas on the griddle for 30 seconds per side.
  • Assemble the fajitas: top the tortillas with fajita mixture, cilantro, and cotija cheese. Serve immediately.
