Ingredients
- 24 oz. Ground Duck
- 1 tsp. Olive Oil
- 1 Sweet Onion, Diced
- 3 Cloves Garlic, Minced
- 2 Tbsp. Chili Powder
- 1 Tbsp. Cumin
- ¼ tsp. Cayenne Pepper
- 1 tsp. Salt
- 1 Cup Tomato Sauce
- 1 Cup Chicken or Beef Broth
- 1 Can Diced Tomatoes, Drained
- 1 Can Red Kidney Beans, Drained
- Corn Chips for Serving
- Shredded Cheddar Cheese for Serving
- Green Onions, Thinly sliced for Serving
Direction
- Preheat a large stock pot to medium-high heat.
- Add ground duck, onions, and garlic and brown for 5-10 minutes.
- Pour in broth, tomato sauce, diced tomatoes, chili powder, cumin, cayenne, and salt. Stir and cover.
- Reduce to low heat at simmer for 45 minutes. Stir occasionally.
- Add beans to the mixture and cook for 15 more minutes.
- Divide chili into bowls and top with as much cheddar cheese, corn chips and green onions as you would like.
