Ingredients
- 1 Roast Half Duck
- 8 oz. Tortilla Chips
- 8 oz. Shredded Mexican Melting Cheese, like Chihuahua
- 1/2 Cup Cilantro, Finely Chopped
- 2 Cloves Garlic, Minced
- 1 Avocado, Diced
- ½ Red Onion, Diced
- 1 Can Tomatoes with Green Chiles
- 2 tsp. Apple Cider Vinegar
- ½ tsp. Sugar
- ½ tsp Salt
- Juice of a lime
- 1 Jalapeno, Sliced (Optional)
- Sour Cream for Garnish (Optional)
Direction
- Preheat oven to 375 degrees and bake Roast Half Duck for 15 minutes or according to packaging instructions.
- Shred Roast Half Duck once cool into bite size pieces.
- Lay tortilla chips out on a foiled sheet pan. Scatter duck pieces over the tortillas chips then sprinkle the cheese over. Bake at 375 for 5-10 minutes or until cheese melts.
- Combine canned tomatoes with garlic, red onion, lime juice, 2 Tbsp. cilantro, apple cider vinegar, and sugar to make salsa.
- Remove the nachos from the oven and let cool for a few minutes.
- Top nachos with salsa, avovado, jalapeno slices, and sour cream to your liking. Serve immediately.
